Light and refreshing for a balmy summer
evening. Serve this salad on its own or as an entrée, prepared in just 3
minutes.
Fetta cheese
Fresh mint sprig
Slice the watermelon thinly, removing the
skin, white flesh and any pips.
Place on plates with a thin slice of fetta
cheese on top.
Place a slice of Spanish onion on top and sprinkle with a sprig of fresh mint.
Option: Drizzle ½ teaspoon of balsamic
vinegar on top.
